200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Cocktail (makes 850ml, enough for 10)

Fresh cranberries, to garnish
Mandarin essential oil, to finish

For the Syrup: Put all the items in a pan, heat until it reaches a light boil, stirring until the sugar dissolves. Then, take off the heat and leave to cool down fully. Pour into an sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for around four weeks.

Preparing the Premix: Combine the specified liquid ingredients into a big jug, let it rest for an hour, then strain preferably using cheesecloth, to ensure it's completely strained.

To serve: Pour 85ml of the batch mix into your cocktail shaker containing ice, and agitate lightly for a minute to chill. Pour into a chilled martini glass or similar, decorate with some cranberries and complete it by giving it a light spray of mandarin oil over the top.
